Bone-in Pork Loin from Złotnicka Pig

Center-cut bone-in pork loin, piece weighing approx. 250 g

After generously seasoning the meat with salt and pepper, prepare the breading:
A classic version using wheat flour, egg with a bit of butter, and breadcrumbs (you can replace breadcrumbs with panko).
Heat Premium Pork Lard in a frying pan — it’s the best choice for frying pork.
Fry the breaded cutlets in the hot fat for about 3 minutes on each side, until the coating is golden brown.
Then place the cutlets on a baking tray lined with parchment paper and bake for 8 minutes at 180 °C (355 °F).
The cutlets can be served with your favorite sides, such as new potatoes with dill and braised young cabbage with caraway seeds.
