Deep-fried potato dishes are a well-known fast food often considered unhealthy due to frying in low-quality oil. By modifying this one element in the recipe for fries, we can create a much healthier dish.

The oil used to fry potatoes cut into rectangular sticks is called frying fat. Among all frying fats, the majority is refined vegetable oil. Less commonly, unrefined oils such as sunflower, rapeseed, or olive pomace oil are used. A healthier alternative for frying fries is called beef tallow. This is simply beef fat, which has the highest smoke point and the lowest chance of producing harmful fatty acids. The advantage of saturated fats is also evident when frying meat. All fast foods, as well as healthier dishes based on frying, should use beef tallow.

Since we know that the best tool for making fries is an electric deep fryer, and the best fat is beef tallow, let’s address the biggest dietary mistake related to potatoes in any form. Potatoes consist of starch, water, fiber, and a small amount of micronutrients. They also have an alkalizing effect, reducing acidity in the body. When eaten with meat, they cause bloating and can extend digestion by several hours. This slows down metabolism and may contribute to excessive fat storage. This means fries should be eaten without meat accompaniments. Other vegetables are allowed. It’s better to treat fries as a standalone snack with light sauces, dips, vegetables, and spices.
