However, the development of culinary technology has introduced new, healthier methods alongside traditional ones. One of these is vacuum frying, which is gaining popularity, especially in snack production.<\/p>\n<p data-start=\"316\" data-end=\"590\">In this technique, food is fried under reduced pressure, that is, in a vacuum environment. This allows for lower frying temperatures (around 90\u2013120\u00b0C instead of 160\u2013180\u00b0C), slows down the breakdown of fats, and limits the formation of harmful compounds such as acrylamide.<\/p>\n<p data-start=\"592\" data-end=\"626\"><strong data-start=\"592\" data-end=\"624\">Advantages of vacuum frying:<\/strong><\/p>\n<ul data-start=\"627\" data-end=\"895\">\n<li data-start=\"627\" data-end=\"732\">\n<p data-start=\"629\" data-end=\"732\"><strong data-start=\"629\" data-end=\"666\">Better color and flavor retention<\/strong> \u2013 for example, carrot or beet chips retain their natural color.<\/p>\n<\/li>\n<li data-start=\"733\" data-end=\"816\">\n<p data-start=\"735\" data-end=\"816\"><strong data-start=\"735\" data-end=\"757\">Less fat in dishes<\/strong> \u2013 products absorb less fat than with traditional frying.<\/p>\n<\/li>\n<li data-start=\"817\" data-end=\"895\">\n<p data-start=\"819\" data-end=\"895\"><strong data-start=\"819\" data-end=\"837\">More nutrients<\/strong> \u2013 lower temperatures protect vitamins and antioxidants.<\/p>\n<\/li>\n<\/ul>\n<p data-start=\"897\" data-end=\"1185\">In traditional cooking, frying relied on high temperatures and available fats, such as lard. The result was hearty, aromatic dishes, often with a crispy crust.
