{"id":2640,"date":"2025-08-12T14:59:01","date_gmt":"2025-08-12T12:59:01","guid":{"rendered":"https:\/\/www.agro-top.com.pl\/?post_type=wiedza&#038;p=2640"},"modified":"2025-08-12T14:59:01","modified_gmt":"2025-08-12T12:59:01","slug":"sous-vide-method-what-is-it-really-about","status":"publish","type":"wiedza","link":"https:\/\/www.agro-top.com.pl\/en\/knowledge\/sous-vide-method-what-is-it-really-about","title":{"rendered":"Sous-vide method \u2013 what is it really about?"},"content":{"rendered":"<p data-start=\"38\" data-end=\"586\"><strong data-start=\"38\" data-end=\"60\">What is sous vide?<\/strong><br data-start=\"60\" data-end=\"63\" \/>Sous vide (French for \u201cunder vacuum\u201d) is a cooking method where food or its ingredients are sealed tightly in plastic bags and cooked in water at a relatively low temperature, which never exceeds 100\u00b0C (212\u00b0F). In practice, some meats prepared this way are heated to only about 60\u00b0C (140\u00b0F). While cooking food in a bag might sound like something from a low-end fast food joint, sous vide is a technique mainly used in upscale restaurants\u2014probably because of the effort it requires. And, it\u2019s an effort that truly pays off.<\/p>\n<p data-start=\"588\" data-end=\"1170\"><strong data-start=\"588\" data-end=\"621\">Advantages of vacuum cooking:<\/strong><br data-start=\"621\" data-end=\"624\" \/>What does cooking food in a vacuum-sealed bag give you? Quite a lot, actually. First, the aroma and flavor remain fully in the dish, not lost in the water used for cooking. Second, the kitchen doesn\u2019t get filled with unpleasant smells like cooked cauliflower or fish. Third, the vacuum bag locks in not only the aromas of vegetables or meat but also their nutritional value, color, and texture. Additionally, this method can be used for cooking pre-prepared foods, like seared meat. But what about the downsides of vacuum cooking? There are some.<\/p>\n<p data-start=\"1172\" data-end=\"1717\"><strong data-start=\"1172\" data-end=\"1196\">Home vacuum cooking:<\/strong><br data-start=\"1196\" data-end=\"1199\" \/>If you don\u2019t have a device that automatically selects and maintains the right temperature, you can still cook sous vide at home. A home sous vide setup should include durable, heat-resistant steam cooking bags, a pot, and a thermometer. If possible, vacuum-seal your food; if not, make sure there\u2019s as little air as possible in the bag. Choose the cooking temperature depending on the dish and ingredients, and monitor it with the thermometer. If the temperature rises too much, you can add a few ice cubes to the pot.<\/p>\n<p data-start=\"1719\" data-end=\"1953\">Remember to season your meat or vegetables before cooking, otherwise it will be hard to fix the flavor on the plate later. If everything goes as planned and the meat is cooked long enough, you can enjoy your first true sous vide dish.<\/p>\n<p data-start=\"1955\" data-end=\"2536\"><strong data-start=\"1955\" data-end=\"2008\">What about that appetizing, crispy crust on meat?<\/strong><br data-start=\"2008\" data-end=\"2011\" \/>Unfortunately, sous vide alone won\u2019t give you a crispy crust because Maillard reactions don\u2019t occur. That\u2019s why a hybrid method of sous vide followed by searing is often used. Simply finish by briefly searing the meat in hot duck or goose fat. Don\u2019t overdo this second step\u2014just sear enough to nicely brown the meat. Keep in mind that the meat\u2019s temperature will continue to rise while searing, so set the sous vide temperature slightly lower than your desired final temperature, for example by about 5 degrees Celsius (9\u00b0F).<\/p>\n","protected":false},"excerpt":{"rendered":"<p>What is sous vide?
