{"id":2633,"date":"2025-08-12T13:36:25","date_gmt":"2025-08-12T11:36:25","guid":{"rendered":"https:\/\/www.agro-top.com.pl\/?post_type=przepis&#038;p=2633"},"modified":"2025-08-12T13:36:25","modified_gmt":"2025-08-12T11:36:25","slug":"lamb-lambchetta-with-homemade-pesto-and-puy-green-lentils","status":"publish","type":"przepis","link":"https:\/\/www.agro-top.com.pl\/en\/recipe\/lamb-lambchetta-with-homemade-pesto-and-puy-green-lentils","title":{"rendered":"Lamb Lambchetta with homemade pesto and Puy green lentils"},"content":{"rendered":"<p><span style=\"font-family: arial, helvetica, sans-serif;\">Lamb Lambchetta with homemade pesto and Puy green lentils<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif;\">Boneless lamb rib is marinated in fat \u2014 Agro Top \u2014 with garlic, rosemary, juniper berries, salt, and pepper.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif;\">We keep it in this marinade in the fridge for 8 hours or overnight.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif;\">From basil, parsley, olive oil, duck fat, pine nuts, garlic, salt, and pepper, we prepare our delicious homemade pesto by grinding all ingredients into a smooth paste, preferably using a mortar and pestle.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif;\">On the flattened lamb ribs, already marinated, spread the pesto generously.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif;\">Then roll the meat like a roulade.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif;\">You can use cling film or kitchen twine to help shape it.<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif;\">(Note: If you use cling film, be sure to remove it before putting the meat in the oven.)<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif;\">Place the rolled lambchetta on a baking tray lined with parchment paper and put it in an oven preheated to 140\u00b0C (284\u00b0F) for 2 hours. Then increase the temperature to 190\u00b0C (374\u00b0F) and roast for another 15 minutes.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif;\">After taking it out of the oven, place it on a cutting board and let it rest for about 10 minutes.<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif;\">This allows the juices to stay inside the meat, keeping it super juicy and flavorful. Then cut into thick slices.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif;\"><strong>Puy green lentils:<\/strong><\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif;\">In a saucepan, saut\u00e9 shallots, garlic, allspice, bay leaf, and a piece of bacon in goose fat.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif;\">Then add the lentils and saut\u00e9 for a short while before covering them with vegetable broth. Simmer gently for 20\u201325 minutes.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif;\">Towards the end of cooking, season with salt.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif;\">Your favorite green vegetables \u2014 in this case, fresh green beans and green peas \u2014 are cooked in a butter emulsion (vegetable broth and butter in a 1:1 ratio) with a pinch of salt for about 4\u20135 minutes.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif;\"><strong>To assemble the dish:<\/strong><\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif;\">Place the lentils on the plate, then the vegetables on top.
